Salmon

The Pacific Northwest is a culinary region that includes Washington State, Oregon and Alaska. This cuisine inherits traditions from the Inuit, Russian pioneers from Alaska, New England cuisine and later on with the Chinese cuisine. The Salmon captured on the wild in Alaska is unbeatable and if you get a chance to visit in the season where fishing them is allowed, do not miss your chance. It is a very different animal from the "farm raised" Salmon we are used to.

The region is also a great producer of fruits such as: apples, pears, cherries, berries and nuts. Food can be frugal using the many berries and fruits in the region or heavy with fatty fish and preserves. It is none the less a region with many possibilities to be creative.
