Cooking on a trail in the middle of nowhere ? This is what we identify as cowboy food from the movies, some salted meat, water from a stream and baked beans like the one we cooked in the picture below.

Steak land U.S.A.

These central and western lands draw a straight line from north to south of the U.S.A. just before the crossing of the Rocky Mountains. The states in this region are North Dakota, South Dakota, Nebraska, Kansas, Oklahoma, northern and central Texas, eastern Montana, eastern Wyoming and eastern Colorado. It seems that the expression "between a rock and a hard place" was invented in this region. The Rocky mountains created a barrier for the pioneers going west in search of gold and prosperity and also shielded this region from moisture from the sea making these regions typically dry places.

These land was once filled with millions of Bison that were hunted to near extinction and the Bison we know today are actually mixed with Cows, if you want to see actual Bison there are still some saved in the Yellowstone National Park. Below is a traditional bison steak (raised on the Ranchlands) from the region cooked by the chef.
