First Settlers
In culinary terms, the New England region includes Maine, Vermont, Massachusetts, Rhode Island, New Hampshire, Connecticut, upstate New York and northern Long Island. The puritan first settlers did not really want to adapt their food tastes, but the new found land brought limitations. This region's arable land is a squeeze between the sea and the north Appalachian mountains.
New England food became richer with the adoption of sea-food, foraging of wild fruits and berries and the usage of Maple Syrup.
Some of our dishes from the region can be seen above. The Portuguese Mussel Stew with Peppers is a nice cultural connection for the Chef, joining his Portuguese heritage with American History. Some other noticeable dishes we have made from the region include the New England Corned Beef Boiled and a traditional Vermont Cheddar Cheese Soup with Soda Bread.
